Cheeseburger Pie

Cheeseburger Pie

I got this recipe from work.  I had to alter it some because we cook in mass quanities. The kids love it and ask for it.

1 1/2 to 2 lbs of hamburger or ground turkey*
1/2 c diced onion
1/2 c diced bell pepper 
1/3 tsp salt
1/4 tsp cumin
1/3 tsp garlic powder
2 tsp chili powder
1/8 tsp cayenne pepper
2 tsp brown sugar
1 can pettie diced tomatoes with liquid**
Cheddar cheese, shredded
2 pie crusts

Brown ground beef/turkey with diced bell peppers and onion until hamburger is cooked and peppers and onions are tender.  Add seasonings and tomatoes (**I don't use the whole can, I use about 2/3 of the can).  Line pie pan with one pie crust and add meat.  Top with shredded cheese.  Place second pie crust on top.  Bake at 400 for 30-35 minutes or until internal temperature is 165.

*If using regular pie crust 1 1/2 lbs of hamburger is enough.  If using a deep dish pie use 2 lbs of hamburger.

Chocolate Chip Cookies

Chocolate Chip Cookies 

1/3 C. butter 
1/3 C. shortening 
1/2 C. brown sugar 
1 egg 
1 tsp. vanilla 
1/2 C. sugar 
1 1/2 C. flour all purpose* 
1/2 tsp. salt* 
1/2 tsp. baking soda* 
*sift together and add 
1 C. chocolate chips 

Beat butter, shortening, brown sugar, egg, sugar, and vanilla until smooth. Sift flour, salt, and baking soda; pour flour in a little bit at a time. Beat until mixed well. Add chocolate chips and stir with spoon. Oven 375 for about 10 minutes.
